4 oz. fresh goat cheese
2 tablespoons honey
3 tablespoons extra-virgin olive oil
2 teaspoons apple cider vinegar
½ lemon, juiced
1 tablespoon water
Salt and fresh ground pepper, to taste
In a blender, combine all ingredients, except the salt and
pepper. Mix until fully combined. If too thick, thin with just a little extra
water. Season with salt and fresh ground pepper. Serve atop a salad of mixed
greens, pecans, sliced apples, and dried cranberries. Leftover dressing will
keep in the fridge for a week or so, just stir before using.
