1 cup orzo
2 ½ cups chicken broth
¼ cup parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Salt and pepper, to taste
Melt butter in a saucepan over medium heat. Cook until butter begins to brown, about 4 minutes. Add orzo to browned butter and cook for another 2 minutes.
Add chicken broth, bring to a boil, then reduce heat and simmer for 13 minutes. Stir in parmesan cheese, parley, salt, and pepper. Cover and let sit for 5 minutes, then serve warm.
